مقبلات ساخنة






مع بداية الصيف و الجو الرائع في بلدي الحبيب الاردن..... يحب معظم الناس الخروج

 سويا للاستمتاع و قضاء اوقات جميلة,  سواءا كان مع العائلة او مع الاصدقاء, و جزء 

من هذة المتعة يتمثل في تجربة كل ما هو جديد من أالاطباق اللذيذة 

و الجميل أنه  في بعض الاحيان عندما أعود الى المنزل احب ان اقوم

 بتجربة بعض ما نال اعجابي انا وعائلتي من أطباق  , حتى أتوصل الى الطريقة 

الافضل و الاطيب لتقديم هاذا الطبق. أحدى المطاعم المشهورة بتقديم

 الاكلات اللبنانية اللذيذة, هو مطعم البيت اللبناني في مدينة جرش الاردنية 

و هذا طبعا يضفي عليه نكهة مميزة لانه يقع في بلدي الام  جرش, يتميز 

بالنظافة و الترتيب و خدمة مميزة و جلسات داخلية و خارجية جميلة ذات اطلالات

 رائعة, و مكان مخصص للعب الاطفال وهي نقطة مهمة بالنسبة لعائلتي... و
طبعا اضافة الى لائحة متنوعة من الاطباق الشهية.....اليوم ققرت نوع من

 اطباق المقبلات الساخنة و اتمنى ان يعجبكم جميعا

السجق المطفى







٣٠٠ غم سجق لحمة أو دجاج 

٣ ملعقة كبيرة زيت زيتون 

بصلة صغيرة مفرومة ناعم جداً 

٥ حبات ثوم مدقوق 

١ ملعقة كبيرة دبس رمان 

١ حبة كبيرة بندورة مبشورة 

٢/١ ليمونة معصورة

ملح و فلفل اسود حسب الرغبة

١ ملعقة كبيرة كزبرة خضراء مفرومة ناعم 






الطريقة

في مقلاة ساخنة نقلب البصل مع الزيت و رشة ملح صغيرة حتى يذبل ويصبح شفاف 

نضيف الثوم ثم دبس الرمان و رشة كزبرة خضراء  الفلفل الاسود و نقلب جيدا 

نضيف السجق و نقلبه قليلا حتى يبدأ يحمر (كل هذه الخطوات على نار عالية و بسرعة)        ه

نخلط عصير البندورة و الليمون و نضيفه على المقلاة الساخنة لنطفي عملية الطبخ، نتركه على الغاز 

ليغلي مدة دقيقتين ثم نرفعه عن النار و نضيف بقية كمية الكزبرة و يقدم على الفور مع خبز ساخن

أكلات متوارثة

صينية الحلبة 




هنالك الكثير من الوصفات المميزة التي تعلمتها قديما و حديثا و من مصادر مختلفة, ولكن من أطيب هذه الأطباق و أقربها الى قلبي هي تلك التي تعلمتها من امي التي بدورها تعلمتها من جدتي, و ذلك لما لها من مكانة خاصة, حيث انها تشكل بالنسبة لي مخزون قديم من النكهات التي نشأت عليها منذ الصغر.           ه
أحببت اليوم مشاركتكم بطبق حلويات لذيذ جدا و متعارف عليه كثيرا بين الناس و هو صينية الحلبة, ولكن معظم الناس رغم حبهم لتناول هذا النوع من الحلويات, الا أنهم يخشون شيئا واحدا و هو رائحة الحلبة التي تعلق بالجسم.        ه
اريد التأكيد لكم بأن وصفتي هذه لا يمكن أن تسبب هذا النوع من الرائحة, و هي غنية جدا بالنكهات اللذيذة, و لقد قام عدد من الاصدقاء بتجربتها و فرحوا جدا بالنتيجة الرائعة

صينية الحلبة





المقادير


٢ ٢/١ كاسة سميد
٢ ٢/١ كاسة طحين
٢ ملعقة كبيرة شومر مطحون
٢ ملعقة كبيرة يانسون مطحون
٢ ملعقة كبيرة حلبة مطحونة
٢ ملعقة كبيرة يانسون حب
٢ ملعقة كبيرة حبة البركة
٢ ملعقة كبيرة سمسم (اختياري)         ه
٢ ملعقة صغيرة خميرة فورية (أو) ٤ ملاعق صغيرة بايكنج باودر
١ كاسة زيت زيتون
ماء فاتر للعجن

طريقة التحضير


- تخلط المكونات الجافة مع بعض 
- تخلط المكونات الجافة مع الزيت حتى تصبح مثل حبات الرمل 
- نعجن بالماء حتى تتكون عجينة ملساء ناعمة 
- تفرد في صواني الخبز ذات الحافة القصيرة حسب السمك الذي تفضلونه ( انا احبها متوسطة إلى قليلة السماكة) ثم تقطع على شكل معينات و تترك لترتاح مدة نصف ساعة إذا استخدمنا بايكنج باودر ، أو ساعتين إذا استخدمنا الخميرة 
- قبل الخبز بعشر دقائق نحمي الفرن على ١٨٠ درجة ، و نخبز الحلبة حتى تحمر الأطراف ثم نحمر الوجه من الأعلى 
- نسقيها بالقطر البارد مباشرة بعد خروجها من الفرن وهي ما زالت ساخنة 
( يمكن إضافة ملعقة كبيرة من السمن البلدي إلى القطر ) 
- تقدم فاترة أو باردة 

و صحتين و عافية

ذ كريات الطفولة

كب كيك راس العبد







 في زمن لم يكن لوجود البقالات الكبيرة أي أثر وكانت الحياة تملأها البساطة و العفوية,  اجمل لحظات الطفولة  البريئة اللتي اتذكرها, هي عندما كنت أذهب الى تلك البقالة المتواضعة جدا بمكوناتها, الرائعة جدا باصحابها  بجانب بيت جدي (رحمه الله), و شراء راس العبد و الاستمتاع بأكله, كل لقمه كانت عبارة عن مزيج بين حلاوة تغليفة الشوكولاتة, و نعومة الكريمة البيضاء و طبعا قرمشة البسكوت اللذيذ. و أجمل ما في الامر هو تقريبا امتلاء نصف وجهي بالكريمة الشهية, تلك اللحظة تأخذك الى عالم من الخيال, تشعر به بأنك تعيش في كومة من القطن الابيض الناعم, و لا تتمنى ابدا انتهاء هذه اللحظة. كان راس العبد هو المنتج الاكثر رواجا و له شعبية عالية بين الاطفال و ايضا حتى الكبار.     ه

اردت فعلا لاطفالي ان يعيشو نفس اللحظات الجميلة, ولكن لسبب عدم توفر راس العبد في جميع الاسواق, و ايضا لعدم توفره بنفس االجودة الاصلية القديمة, قررت ان اتعلم طريقة عمله منزليا.
 بحثت مطولا و وجدت وصفات كثيرة, و لكن بعد التجربة توصلت الى الوصفة الاكثر نجاحا و النتيجة كانت اكثر من رائعة.    ه
 عندما عرضت صورة النتيجة على صفحتي الخاصة على الفيسبوك, تفاجئت بكثير من التعليقات و الرسائل يستفسرون عن الطريقة, و بعد ذلك تواصلت معي قناة رؤيا الاردنية لأقوم بعمل الوصفة على الهواء مباشرة. والحمدلله كانت ردود الافعال أكثر من رائعة.     ه

كب كيك راس العبد

مقادير الكب كيك

٢ كوب زائد ٢ ملاعق طعام من السكر 
٣ ١ \٤  طحين لجميع الاستعمالات
٣ \٤  كوب زائد ١ ملعقة طعام من مسحوق الكاكاو 
١ ١ \٢   ملعقة صغيرة بايكنج باودر
١ ١ \٢  ملعقة صغيرة بايكنج صودا
١ ملعقة صغيرة من الملح
٢ بيضة كبيرة
١ كوب حليب كامل الدسم
١ \٢  كوب زيت نباتي
٢ ملعقة صغيرة فانيليا 
١ كوب ماء مغلي

مقادير طبقة البسكوت 

 ٢٠حبة بسكوت دايجستف المغلف بالشوكولاتة
١ \ ٣ كاسة زبدة
‌‌

مقادير الفروستينج 

٢  ١ \٢ كوب سكر
٦ بياض البيض كبير، بدرجة حرارة الغرفة
١ \٢  كوب ماء
١ \٢  ملعقة صغيرة من كريم التارتار
١  ملعقة كبيرة من الفانيليا

لتغليفة الشوكولاته

٦٠٠ غرام شوكولاته نصف حلوة, مفرومة فرما ناعما 
٦  ملاعق كبيرة من زيت نباتي


 لعمل طبقة البسكوت

سخني الفرن الى 180 درجة. و قومي بتغليف صينيتين كب كيك بالورق المخصص
اطحني البسكوت و الزبده في محضرة الطعام حتى يصبح قوامه مثل الرمل تقريبا, ثم قومي  بتوزيعه على كاسات الكب كيك حوالي ملعقة كبيرة لكل كاسة 

لعمل الكب كيك 

نخلي السكر والدقيق ومسحوق الكاكاو والبايكنج بودر و البايكنج صودا والملح معا في وعاء الخلاط الكهربا
في وعاء  اخر كبير، يخلط معا البيض والحليب والزيت والفانيليا و يضاف إلى خليط الدقيق و تقلب المكونات على سرعة متوسطة لمدة دقيقتين. إثم يضاف الماء المغلي ويقلب جيدا
قومي بملئ قوالب الكب كيك ثلثين الارتفاع تقريبا من خليط الكيك. و ثم تخبز في الفرن مع تدوير الصينية في منتصف مدة الخبز، حتى يخرج عود الاختبار نظيفا حوالي 18 إلى 20 دقيقة. تنقل الصينية على لوح شبكي حتى تبرد لمدة 10 دقائق. ثم نرفع الكب كيك من الصينية وتترك لتبرد تماما.

لتحضير الفروستينج 

في وعاء الخلاط الكهربائي، نمزج  السكر وبياض البيض، والماء، وكريم التارتار, و نخفق حتى تضهر الرغوة ثم تنقل فوق حمام مائي مع الخفق المستمر لمدة بين 3-5 دقائق حتى يذوب السكر ويصبح المزيج ملمسه ناعما و ضمان التخلص من البكتيريا داخل البيض. يرفع المزيج من على النار ثم نضيف الفانيللا و نستمر بالخفق على سرعة عالية حتى يجمد و يشكل قمم صلبة، حوالي 12 إلى 16 دقيقة.
ينقل المزيج الى كيس التزيين المزود بقطعة التزيين الدائرية بحجم نصف انش تقريبا و تزيين الكب كيك بالفروستينج على شكل قمع ثم توضع على صينية كبيرة وتبرد في الثلاجة جيدا حوالي ساعة او اكثر




غلاف الشوكولاته
توضع الشوكولاته و الزيت النباتي في وعاء مقاوم للحرارة فوق حمام مائي


و يحرك المزيج حتى يذوب ويصبح ناعما. ثم ينقل إلى وعاء عميق


 ويترك ليبرد حوالي 15 دقيقة, تقلب قعطة الكب كيك رأسا


 على عقب و تغطس في خليط الشوكولاتة جيدا ثم ترفع


 و تترك لتتماسك فوق لوح شبكي و من ثم تنقل الى الثلاجة حتى


 تبرد كليا لمدة 30 دقيقة على الاقل للسماح


 لتغليفة الشوكولاتة بان تجمد





ملاحظة


يمكن عمل وصفة الفروستينج و تغليفة الشوكولاتة فوق قطع



 بسكوت دايجستف المغطس بالشوكولاتة و ذلك للحصول


 على راس العبد التقليدي بدل من الكب كيك اعلاه


يمكن الاحتفاظ بها في الثلاجة لمدة ثلاثة ايام

My Every Day Energy Boost

Granola



Sometimes it's easy to say that we want to have a healthy life-style, but when it comes to reality, people loves to enjoy eating their meals without hearing that noisy alarm inside their heads telling them to stop!!!!
Am not a nutritionist, Am a Passionate Home-Cook that loves to serve yummy dishes to my family, but at the same time, i always try to include healthy dishes on the table...

Healthy and yum....yes you can!!!!


Is it about depriving yourself from all what you love??....  Not at all, it's only about controlling what you add to your diet and the amount you add.
 The very most important tip that i can tell you is "Have your Breakfast"....yes it helps out your metabolism as well as digestion, and provides all the energy you need to complete your day.
I absolutely adore breakfasts and cant skip them at all, so go ahead and pamper yourself every morning like i do.
A lot will say that they don't have time to make breakfast every morning because of the crazy life-style, i say try this recipe and thank me later on. 


Granola is a breakfast food as well as a snack, popular in North America, consisting of rolled oats, nuts, honey, and sometimes puffed rice, that is usually baked until crisp. During the baking process the mixture is stirred to maintain a loose, breakfast cereal-type consistency. and sometimes don't in order to have bar like shape. Dried fruits, such as raisins and dates, are sometimes added..Granola is often eaten in combination with yoghurt, milk, honey, and fresh fruits such as strawberries, bananas and blueberries. Granola recipes that include flaxseed, is often used to improve digestion.


Ingredients:

2 cups rolled oats

1/2 cup walnuts

1/2 cup pecans

1/2 cup pumpkin seeds

1/2 cup flax seeds

1/2 cup sunflower seeds

1/2 cup dried cranberries

1/2 cup raisins

1/2 cup crispy brown rice cereal

2 teaspoons cinnamon

1/3 cup brown sugar

1/2 cups light honey

3 tablespoon sweetened condensed milk 

3 tablespoons maple syrup

2 tablespoon Extra Virgin olive oil

Sea salt



Method:


Preheat oven to 180 C. Place the oats, walnuts, pecans, pumpkin seeds, flax seeds and sunflower seeds on a large baking sheet. Add about 2 tablespoons of olive oil and a sprinkling of sea salt. Mix to combine. Roast for about 5 minutes, checking often to make sure nothing burns. Remove the tray and lower the heat to 160 C.
Put the roasted ingredients in a large bowl. Add cranberries, raisins, cinnamon and crispy brown rice cereal. Stir to combine.
Heat up the honey, brown sugar, sweetened condensed milk and maple syrup in a small saucepan, on medium-low heat. Stir until all the sugar dissolves, about 5 minutes. Add the honey mixture to the bowl with the granola and stir until everything is coated with the honey.
Very lightly oil a tart dish with olive oil. Using a paper towel to absorb any excess oil. Pour the granola until the dish, and press down firmly with a spatula. Bake for 15 minutes. Let cool before serving.



Notes:

* If you want to cut granola into bars, store in the fridge. It stays together much

 better when cold. but if you want to have it like cereal stir it twice during 

baking and crumble it in the jar immediately after baking while still warm.


* Feel free to substitute with your favourite dried fruits or nuts, sometimes i use 

almonds, peanuts, pistachios, coconut, dried apricots or plums.... etc. 




In order to make the Parfait you will need:





 * 3 tablespoon granola mix (recipe above).


 * 3 tablespoon of your favourite flavoured yoghurt (preferably low fat one )


 * 3 tablespoon  diced fresh fruits (strawberries, banana, apple, blueberries, 

      raspberries, pineapple, mango.... etc..) 


 * 1 teaspoon honey mixed with fruits 

    

        place one tablespoon of Granola Mix in the bottom of your cup then top it with 1 tablespoon of 

the fresh fruits mix and then with your flavoured yoghurt then repeat again until you fill the cup....

Launching My Blog

Hello everybody,
 Its been long time since i wanted to make my own blog, and finally here i am doing it.....
I love cooking and baking... it's passionate, creative, inspirational and therapeutic somehow. 
several years ago, a close friend of mine Noor Maraqa noticed this and she encouraged me a lot to start sharing my recipe with family and friends, so she surprised me by starting a group on Facebook called Rawan Otoom kitchen and already downloaded some of my home made recipes in it, and to be honest that made me so happy and really encouraged me a lot to start this journey, by making my own page on several social networks under the name of Rawan's Kitchen, and thanks god it gets more and more popular with time.

 My kitchen is my comfort zone, i spend a lot of time there, and always love to try new recipes, usually i make the same recipe several times and each time i twist something either by adding or removing one of the ingredients until i get to the final recipe, that will please most of the tastes around me, specially my beloved husband  who never lies to me after tasting a dish and tells me how to improve it next time, my father  who's very passionate about cooking and always comes to me with new ideas to try...you don't want to  enter the kitchen when me and my dad are cooking together, competition is on it's highest levels.  my mother is my biggest supporter and my 1st ever mentor whom i learned all the basics from. and always encouraged me to get into the kitchen and try what's new out there , and finally my mother in law, i really learned a lot from her, i love her way of cooking and paying attention to every single detail in order to get the best final dish that everybody will enjoy eating.... i own you all a lot and love you loads. 

My blog will concentrate mainly on my home made recipes and some cooking tips and secrets in order to encourage you all to try them and get the best results out there, and am looking forward to hear your feedbacks, simply by leaving a comment down at the end of each post.... 

The very 1st recipe that i decided to start my blog with,  have a nice memory inside me, hope you will enjoy making it and share it with someone you love... am sure it will taste even better.

The Magical Crème Caramel Cake (kudrit kader)




What would be more delicious and mouth watering than a lemon pound cake? The answer would be a lemon cake with Crème caramel. One of the masterminds of dessert recipes came up with a way to mix them both together in one dish. So you can enjoy the fluffy and fresh taste of lemon cake with the rich taste of Crème caramel. This cake is from the Mediterranean cuisine. It's called kudrit kader, which means made by a miracle. It got that name because you mix the Crème caramel and the cake ingredients in one dish and somehow the Crème caramel goes on bottom and the cake goes on top. Contrary to what you might think, it's easy and fast to make. You will actually enjoy making it and most of all eating it. If you wish you can also use this recipe to only make Crème caramel with its delicious sugar syrup. This recipe goes back to school days, as a little girl back then, I watched my mom (my great model) making this cake. The magic that happened inside the oven, made me fall in love with this recipe, and sparkle the passion for cooking and baking inside me, Maybe this was the 1st recipe that I mastered. From that day until now every time I make this, people ask for the recipe. So here we go...


Ingredients

This cake consists of three parts.

Ingredients:
1st- Caramel
  • 1 cup white granulated sugar
2nd- Crème Caramel
  • 3 eggs              
  • 2 teaspoon vanilla extract
  • 3 cups powdered milk
  • 3 cups water
  • 1/2 cup white caster sugar
  • zest and juice of 1 lemon
3rd- The Cake:
  • 2 eggs
  • ½ cup sugar
  • ½ cup vegetable oil
  • ½ cup warm water
  • 11/2 cup all purpose flour
  • 3 teaspoon baking powder
  • 3 teaspoon vanilla extract
  • zest and juice of one lemon
  • 1 can nestle heavy cream (160g)

Method

Caramel Method:
  1. At a low temperature, put sugar in a medium size aluminum angel food or round cake pan, and heat it up above the stove until it’s completely melted with beautiful amber color, make sure u stay close because it burns out so quickly.
  2. Put it away to cool. Eventually it’s going to get hard.

Cream Caramel Method:
  1. In an electric mixer add all ingredients and mix until well combined.
  2. Add the mix on top of the cold hardened caramel.

Cake Method:
  1. With an electric mixer beat eggs, sugar and vanilla.
  2. Add vegetable oil
  3. Add flour and baking powder.
  4. Add water, cream, lemon juice and zest. Keep beating until batter well-blended.
  5. Add batter on top of sugar and crème caramel mix.
  6. In a bigger deep roasting pan, put the smaller aluminum cake pan that has the batter. Then pour boiling water halfway up the sides, Make sure water doesn’t get to batter.
  7. In a preheated oven to 180 degrees C put the pans. Bake between 45 to 60 minutes or until a wooden pick inserted in the middle, comes out with just a few moist crumbs on it.
  8. Leave cake to cool outside for an hour, then refrigerate for at least 4 hours, preferably over night.
  9. Before serving, place the cake pan on the same roasting pan you used before, and fill it halfway up again with boiling water for 1 minute, then lift the pan up and dry the sides.
  10. On the serving plate turn the cake pan upside down so it would come down on the plate and the sugar caramel syrup drizzling over the cake. Divine
