Pastry Cream
* 1¼ cups whole milk
* 1 teaspoon pure vanilla extract
* 3 large egg yolks
* ¼ cup granulated white sugar
* 4 tablespoons cornstarch (corn flour)
* 1/8 teaspoon almond extract
* 1 tbsp raw honey
Brioche dough:
* ¼ cup whole milk, warm
* 1 tablespoon honey
* 1½ teaspoons active dry yeast
* 2 large eggs, lightly beaten
* 1¾ cup all-purpose flour
* 2 tablespoons granulated sugar
* ½ teaspoon salt
* ½ cup (100g) unsalted butter, at room temperature
Honey-Almond Topping:
* ¼ cup (4 tablespoons) unsalted butter
* ¼ cup sugar
* ¼ cup honey
* pinch of salt
* ¾ cup sliced almonds
